To assess the sanitary status of school lunch manufacturers in 5 cities, questionnaire survey was used to collect information from 22 manufacturers in 5 cities. The results showed that the general sanitary condition of school lunch manufacturers was fairly good. However, the arrangement of the workshops at 3 manufacturers was irrational; 1 manufacturer did not have a packing room. The facilities varied in different manufacturers. 10 manufacturers did not have a special preparation room; 12 manufacturers did not have sterilizing and cleaning tanks; 2 manufacturers did not have aseptic facilities and 6 manufacturers did not have ventilation equipment. The hygiene of staffs also varied in different manufacturers. The school lunch served by 4 manufacturers exceeded 3 hours from making ready to eating and only 13 manufacturers kept food samples for 48 hours. The sanitary status of school lunch manufacturers need to be improved. The basis research on the theory and technique of nutritional school lunch should be reinforced; management inside and outside the manufacturers should be enhanced.
