济宁市市区甲醛污染火锅食品原料的调查

    摘要:

    为治理“餐桌污染”,山东省济宁市对市区的29家火锅经营单位的食品进行了抽样检查。共采集火锅原料10种99份,甲醛阳性的35份,检出率35.4%,其中水发鱿鱼的检出率为75%,腐竹检出率为66.7%。29个单位中有17家检出甲醛污染的食品,占总经营户的58.6%。检查结果表明,济宁市火锅甲醛污染严重。应加强食品卫生管理,加强卫生知识培训,寻找符合卫生要求的食品添加剂替代甲醛加工火锅食品原料。

    Abstract:

    samples of raw materials used for chafing dish by 29 restaurants were tested.The results showed that 35(35 4%) samples were formaldehyde positive.The positive rate of dried squid soacked with water was 75%.The positive rate of dried rolls of bean milk cream was 66 7%.17(58 6%)chafing dish restaurants were found using formaldehyde in the processing of raw materials.The result of the survey suggests that the food hygiene inspection and surveillance should be strengthened,more attention to food hygiene training should be paid for the restaurant operators,formaldehyde should be substituted by some new harmless food additives for the processing of raw materials used in chafing dish.
