Abstract:To evaluate the Hygicult CF dipslides method in on-site examination of coliform on the surfaces in food production areas and catering places,the hygicult CF dipslides method and traditional zymotechnic method were used to make parallel examinations of coliform on the surfaces of health food production areas, flowered cake shops and catering places which represented three different levels of contamination. The total number of samples was 636. The two methods were also used to examine the coliform on the stainless-steel surfaces artificially contaminated with E. coli (ATCC).The results the samples taken from the food production areas: The overall rate of coincidence of the results from the two methods was 98.0%.According to the sampling sites, the rate of coincidence of the results from the two methods on the surfaces of examination was 98.0% in the health food production areas, 96.2% in the flowered cake shops and 93.8% in the catering places. According to the type of the samples, the rate of coincidence of the results from the two methods was 100% on the surfaces of the food containers, cooking utensils and the operating tables, 96.5% on the surface of the conveyer belts, 96.4% on the surface of the bowls, 93.2% on the surface of the cutting-boards and 89.2% on the surface of the cutting-knifes. According to the material of the samples, the rate of coincidence of the results from the two methods was 100% on the surface of stainless steel, 96.5% on the surface of chinaware, 95.0% on the worker's hands, 91.8% on the plastic surfaces and 89.2% on the fabric surfaces. There was no statistical difference between the results from the two methods (P>0.05). The samples taken from the artificially contaminated stainless-steel surfaces: the two methods got similar results. Therefor, Hygicult CF dipslides method can replace the traditional zymotechnic method in examining the coliform on the surfaces in food production areas.
