    摘要:

    目的为了进一步提高婴幼儿配方粉的卫生质量,确保婴幼儿配方粉的安全。方法选择在中国具有代表性的采用湿法工艺生产的1家企业作为试点单位,参照CAC发布的《HACCP体系及其应用准则》进行现场调查,了解生产工艺,对婴幼儿配方粉生产所涉及的所有环节进行危害分析。确立了原料奶的验收、配料、杀菌浓缩3个关键控制点,确定了相应的关键限值和控制措施,建立了监控、纠偏、验证程序和文件记录保存系统。结论建立的HACCP体系合理有效,能够充分保障婴幼儿配方粉的卫生质量和安全。

    Abstract:

    Objective To improve the hygienic quality of infant formula,the study on the application of HACCP in infant formula enterprises was carried out.Method One enterprise in which the representative wet technique was used to produce infant formula was selected as the object.According to "HACCP System and Guidelines for Its Application" issued by CAC,hazard analysis to raw material and each processing step was conducted by investigation of the technical processes on the spot.Three critical control points(CCPs) were defined: the quality of raw milk,mixing the supplementaries,sterilization and condensation.The critical limits and control measures of each CCP were set up as well.The monitor system,corrective actions,verification procedures,and documents and records keeping were also established.Conclusion The HACCP system was feasible and effective,and it could ensure the hygienic quality and safety of infant formula.
