To understand the development of food hygiene supervision in Shanghai during 30 years of reform and opening-up in China,the changes of administration,supervision ability,supervision mechanism and levels of food hygiene were analyzed.The reform and opening-up policy improved the environment for food production and management and provided powerful material guarantee for food hygiene supervision and realized a spanning development of food hygiene supervision.
