    摘要:

    食源性致病菌对低pH值环境的抗性通常被认为是一个重要的致病决定因素,它帮助细菌通过胃,并能以极低的感染剂量引起疾病。本文主要对大肠埃希氏菌的三种主要氨基酸脱羧酶系统(谷氨酸脱羧酶系统、精氨酸脱羧酶系统和赖氨酸脱羧酶系统)的耐酸作用机制方面的研究进展进行概述,以期为食品加工工业控制细菌的污染提供新的认识,也为后续开发病原菌感染的预防和治疗新策略提供理论基础。

    Abstract:

    Resistance of foodborne pathogens to low pH environments is often considered an important determinant of disease, which helps bacteria pass through the stomach and can cause illness at very low infective doses. This paper mainly reviews the research progress in the acid-resistant mechanism of three main amino acid decarboxylase systems of Escherichia coli (glutamic acid decarboxylase system, arginine decarboxylase system and lysine decarboxylase system). In order to provide a new understanding for the control of bacterial contamination in food processing industry, and also provide a theoretical basis for the subsequent development of new strategies for the prevention and treatment of pathogenic bacteria infection.
