    摘要:

    交链孢毒素主要是由交链孢霉菌(Alternaria)产生的次生代谢产物,在世界各地的食品中广泛存在,对人类健康构成严重威胁。因此,解析其毒性和发现危害防控措施已成为目前的研究重点。本文主要概述了食品中常见的四种交链孢毒素的毒性、暴露风险、污染控制和毒性干预方法等,旨在为交链孢毒素的风险评估、安全限量标准和防控措施的制定提供参考,对保障食品安全和人类健康具有重要意义。

    Abstract:

    Alternaria toxin is a secondary metabolite produced by Alternaria. It is widely found in food products all over the world and poses a serious threat to human health. Therefore, the analysis of toxicity and the discovery of hazard prevention and control measures have become the focus of current research. This paper mainly summarizes the toxicity, exposure risk, pollution control and toxicity intervention methods of four common alternaria toxins, such as to make chain spore mold toxin risk assessment, safety evaluation standard and provide reference for the establishment of prevention and control measures, to ensure food safety and human health is of great significance.
