    目的 通过分析绵阳市由皮蛋引起的食源性疾病事件流行病学特征,为有效预防和控制该类食源性疾病事件提供科学依据和技术指导。方法 收集2014—2023年期间“食源性疾病暴发监测系统”中绵阳发生的皮蛋引起的暴发事件,进行描述性分析。结果 2014—2023年,绵阳市报告的因食用皮蛋引起的食源性疾病暴发事件151起,发病人数515人,死亡1人,患病率69.41%,病死率0.19%,占同期上报食源性疾病暴发事件的21.98%。5~9月是食用皮蛋引起的食源性疾病暴发事件的高发期,占报告事件数的82.78%;发生场所以家庭为主,占报告事件的90.07%;皮蛋主要为家庭自制,占报告事件的37.75%;皮蛋食用方式均为直接凉拌和生食,占报告事件的100.00%;已查明致病因子的事件均为沙门菌,占报告事件的77.48%,血清型以鼠伤寒沙门菌为主。结论 皮蛋是绵阳市食源性沙门菌暴发的主要原因食品。应在高发地区、高发季节、重点场所做好监测预警,并有针对性地开展相关食品健康教育宣传。家庭应该作为防控和健康教育的重点,引导大众不自加工皮蛋,食用前将皮蛋蒸煮,最大限度减少因食用皮蛋引起的食源性疾病暴发事件发生。

    Abstract:

    Objective Over analysis of epidemiological characteristics of foodborne disease events caused by Century eggs in Mianyang City, we provide scientific basis and technical guidance for the effective prevention and control of such foodborne disease events.Methods A descriptive analysis was conducted by collecting outbreaks caused by Century eggs in Mianyang reported by Mianyang City through the Foodborne Disease Outbreak Surveillance System from 2014 to 2023.Results From 2014 to 2023, it was reported 151 foodborne disease outbreaks caused by eating Century eggs in Mianyang City, with 515 cases and 1 death. The attack rate was 69.41% and the fatality rate was 0.19%, accounting for 21.98% of the foodborne disease outbreaks reported in the same period. The period from May to September was the high incidence period of foodborne disease outbreaks caused by eating Century eggs, accounting for 82.78% of the reported incidents. the main places of occurrence were families, accounting for 90.07% of the total number of incidents. The source of Century eggs purchased was mainly home-made, accounting for 37.75% of the reported incidents; Century eggs were eaten directly in cold sauce or raw, accounting for 100.00% of the reported events; In the events where the pathogen has been identified, the pathogen was always Salmonella, accounting for 77.48% of the reported incidents, and the serotype was mainly Salmonella typhimurium.Conclusion Century eggs were the main cause of foodborne Salmonella outbreak in Mianyang City.Therefore, monitoring and early warning should be strengthened in high-risk areas, peak seasons, and key venues, and targeted health education and publicity on related food safety should be carried out. The family should be the focus of prevention and health education. We should guide the public not to home made Century eggs, fully cook Century eggs before consumption, so as to minimize foodborne disease outbreaks caused by Century eggs.
