    目的 系统调查姜黄和姜黄素作为食品添加剂在中国预包装食品中的实际使用情况,评估中国居民通过膳食摄入姜黄和姜黄素的暴露水平。方法 本研究基于《食品安全国家标准 食品添加剂使用标准》(GB 2760—2024)中姜黄素使用限量,并通过问卷调查收集企业使用姜黄和姜黄素情况,以及抽检食品样品中姜黄素含量,结合食物消费量数据,依次进行理论暴露评估、基于企业调查最大使用量的暴露评估和实际暴露评估,并与姜黄素每日允许摄入量[0~3 mg/(kg·BW)]进行比较以表征风险。结果 理论暴露评估、基于企业调查最大使用量的暴露评估和实际暴露评估显示,一般人群姜黄素每日平均暴露量分别为1.31、12.66和0.18 mg/d,均低于每日允许摄入量,健康风险较低。但理论暴露评估仅考虑了姜黄素,基于企业调查和实际监测的评估均未覆盖标准允许使用的全部食品类别,且姜黄中姜黄素的含量不确定是本次评估的主要不确定性来源。结论 中国一般人群通过食品添加剂途径摄入姜黄/姜黄素的健康风险较低。建议进一步扩大使用情况调查和市场监测范围,并考虑合并姜黄和姜黄素的使用范围,使用量均以姜黄素计,获得更科学的暴露评估结论,为优化食品添加剂使用标准及加强风险控制提供依据。

    Abstract:

    Objective This study aims to systematically investigate the actual usage of turmeric and curcumin as food additives in prepackaged foods in China and assess the dietary exposure levels of the Chinese population to these compounds.Methods Based on the maximum usage limits of curcumin specified in the National Food Safety Standard for the Use of Food Additives (GB 2760-2024), this study collected data on the application of turmeric and curcumin in enterprises via questionnaire surveys, determined curcumin contents in randomly inspected food samples, and integrated food consumption data to successively conduct three types of exposure assessments: theoretical exposure assessment, exposure assessment based on the maximum usage level from enterprise surveys, and actual exposure assessment. The dietary exposure level was compared with the curcumin acceptable daily intake (ADI) of 0-3 mg/(kg·BW) to characterize potential health risks.Results The theoretical exposure assessment, the exposure assessment based on the maximum use levels obtained from enterprise surveys, and the actual exposure assessment showed that the mean daily dietary exposure to curcumin in the general population was 1.31, 12.66, and 0.18 mg/d, respectively. All estimated exposure levels were below the acceptable daily intake, suggesting a low health risk. However, the assessments did not cover all food categories permitted by the standard. Major uncertainties included incomplete coverage of food types in consumption surveys and the lack of specified curcumin content in turmeric standards.Conclusion The health risk associated with dietary intake of turmeric and curcumin via food additives is low for the general Chinese population. Further expansion of usage surveys and market monitoring is recommended, as well as integrating the application scopes of turmeric and curcumin and standardizing their usage levels as curcumin equivalents, to support more reliable exposure assessments and inform food additive standard optimization and risk control.
