Abstract:目的比较甲醇溶液和三氟乙酸(TFA)溶液对海产品中砷化合物的提取能力,提出海产品中无机砷测定方法,为修订GB/T 5009.11食品中无机砷的测定方法提供依据。方法以不同比例的甲醇溶液和2mol/L TFA溶液为提取剂,超声提取或热浸提后,以正己烷萃取除去脂质成分,萃取液以N2浓缩或减压旋转蒸发至近干,以超纯水溶解残渣,过滤后进样。以20mmol/L磷酸二氢铵(pH6.0)为流动相,以Hamilton PRPX-100离子色谱柱分离,采用液相色谱-原子荧光光谱法(LC-AFS)测定。结果不同比例的甲醇溶液和2mol/L TFA溶液对海产品中砷化物的提取能力存在差异。2mol/L TFA溶液热浸提对无机砷的提取效果优于50%和90%甲醇溶液,且在提取过程中保持样品中主要砷化物形态稳定。采用2mol/L TFA热浸提海藻样品,其无机砷测定结果的FAPAS国际比对考核Z评分为0.3。结论以2mol/L TFA溶液为提取剂,热浸提2h后,采用液相色谱-原子荧光光谱法测定海产品中无机砷含量,方法特异性强,结果准确可靠。

Abstract:目的监测江苏省主要食源性致病菌污染状况,确定本地区高危食品,为预防控制食源性疾病提供科学依据。方法依据GB/T 4789—2003食品卫生微生物学检验方法,对样品分别进行沙门菌、单核细胞增生性李斯特菌、大肠杆菌O157∶H7、空肠弯曲菌和副溶血性弧菌进行分离,生化及血清学鉴定。结果共监测生畜禽肉、熟肉制品、生食蔬菜、水产品8类样品共804件,检出致病菌113株,总检出率14.1%(113/804)。其中沙门菌检出33株,检出率为4.1%(33/804),单核细胞增生性李斯特菌检出41株,检出率5.6%(41/738);副溶血性弧菌检出13株,检出率为11.2%(13/116);金黄色葡萄球菌检出率15.9%(24/151);大肠杆菌O157∶H7检出2株,检出率0.41%(2/493);空肠弯曲菌和阪崎肠杆菌未检出。33株沙门菌经血清型鉴定,分离出9种血清型,主要是德尔卑沙门菌,其次为罗米他沙门菌和鸭沙门菌。结论江苏省地区食品存在食源性致病菌污染,其中水产品和生肉是主要污染食品品种,而熟肉和生食水产品导致食源性疾病的风险较高。

Abstract:目的掌握广东省蔬菜、水果中有机磷农药的残留状况,为政府部门采取有效预防措施提供依据。方法自2001年起每年在全省各监测网点抽检各类新鲜蔬菜、水果,采用气相色谱仪和气相色谱质谱联用仪,参考GB/T 5009.20—2003《食品中有机磷农药残留量的测定》等分析方法进行检测。结果连续7年的监测共获得47400个检验数据,蔬菜、水果中有机磷的检出率和超标率分别为10.1%和8.0%,2001-2007年间,甲胺磷、甲基对硫磷、久效磷等国家禁止在蔬菜水果中使用的高毒高残留的有机磷农药还在普遍使用。结论广东省各地农产品中有机磷农药残留检出率和超标率变化趋势不明显,有机磷农药在蔬菜水果中的使用较为普遍。

Abstract:目的研制一种简便、快速、准确测定酱油中可溶性无盐固形物的检验方法。方法基于微波法测定食品中水分/固形物或挥发物的原理,优化了仪器的加热功率、时间、加热温度及取样量等适宜条件,建立了微波法测定酱油中可溶性无盐固形物含量的快速分析方法。结果在仪器设置加热功率50%、时间15s、温度105℃、取样量0.5ml条件下,测定结果与国标法(重量法)比较相一致,经配对t检验,P>0.05,差异无统计学意义。同一样品重复测量6次,相对标准偏差(RSD)为1.06%~1.45%。结论用微波法测定酱油中可溶性无盐固形物含量,操作简便,快速、准确、省时,分析时间仅需2~3min,适宜日常样品的快速监测。

Abstract:目的了解宝鸡市食源性致病菌污染状况。方法按照GB/T 4789—2003食品微生物检验标准方法检测。结果2005-2007年共对302份食品进行食源性致病菌污染监测,检出致病菌86株,检出率为28.5%,其中单增李斯特菌52株,检出率为17.2%,副溶血性弧菌24株,检出率为38.1%,沙门菌8株,检出率为2.6%,出血性大肠埃希菌O157∶H72株,检出率为0.7%。5类食品中鲜冻水产、生畜禽肉、速冻食品致病菌检出率较高,分别为55.6%、30.7%、25.0%%,熟肉制品、生食蔬菜中也有检出,分别为7.8%、7.3%。结论鲜冻水产、生畜禽肉、速冻食品是食源性致病菌污染的主要食品,存在食物中毒隐患,应引起足够重视。

Abstract:目的了解江干区食品中单核细胞增生性李斯特菌污染状况。方法参考国标方法,采用进口显色培养基,对4类食品进行单核细胞增生性李斯特菌分离,生化及血清型鉴定。结果109份样品共检出单核细胞增生性李斯特菌15株,总检出率为13.8%;生肉类、生食果蔬类检出率分别为36.8%、5.9%,熟肉制品和水产品中未检出。15株单核细胞增生性李斯特菌分属2个血清型,1/2b血清型占73.3%,1/2a血清型占26.7%。结论江干区食品中存在单核细胞增生性李斯特菌的污染,特别是生肉。
